(Hour 1c) Chef Oonagh Williams sang the praises of sunrises, fresh beets (and “herbs”) in her special salads and spectacular wines. Healthy eating using as-local-as-you-can-get ingredients is always her modus operandi. That good food costs more to produce and that’s why better, healthier foods are NOT the modus operandi of Big Business food producers. FDA approved food isn’t something Williams necessarily recommends. Williams cited examples (how many pounds of meat got recalled in CA?) of how and why she cooks against the grain.
